Turn on the MONTVEL barbecue in Cooking Mode, set the temperature to 180°C, and select the MAX power setting for the griddle.

Generously coat the prime rib with olive oil and season it liberally with fleur de sel and freshly cracked black pepper.

Once the griddle is hot, add the butter and oil, then place the prime rib on it. Flip it every 40 seconds until a beautiful crust forms.

Place the prime rib on the upper grill rack and insert the cooking probe into the thickest part of the meat. Set the probe temperature to 42°C for rare doneness.

When the internal temperature is reached, remove the prime rib and let it rest for 10 minutes in aluminum foil. Slice it on a wooden cutting board and serve immediately.
